High Carbon Steel (not stainless)

Length = 9”

Tang = 3.5 mm

Brut De Forge ( forged to dimension and  closer to the edge is ground thin after heat treat )

Handle = Stabilised Dyed Poplar burl handle - with a G10 bolster

Steel = 52100 - forged in Gubbeen , forged to shape and after heat treat the blade is given a slight hollow grind making it thin behind the edge, this blade has a bigger hollow grind on one side then the other for a right handed user but has a double bevel as normal

Weight = grms

Please note that high carbon steel will rust and tarnish if not stored well or cared for as needed , there is info on this in my terms and warranty section of the website.

52100 is a high-carbon bearing steel highly valued for chef knives, offering an exceptional balance of high hardness (60-61+HRC) and superior toughness.
